Eve's Pudding 

My mum made this simple pudding, she called it Apple Charlotte and we had it most weeks, it was real comfort food.

It needs a good baking apple such as Bramley apples.The sharpness of the apples contrasts beautifully with the sweet sponge flavoured with a hint of cinnamon.The pudding was always served with custard which can be canned, homemade or made with custard powder. ​

  •  Preparation time:
    15 minutes
  •  Cooking time:
    30 minutes


Ingredients
1kg cooking apples sweetened to taste
200g eggs out of their shells
200g caster sugar
175g soft margarine
25g butter at room temperature plus extra to grease the dish
10g baking powder
Pinch of ground cinnamon



What you will need
Rectangular or oval shallow dish, lightly greased with butter , a lasagne dish would be fine


Method

Set the oven for 160C fan or equivalent


  1. Peel, core and slice the apples place in a microwavable bowl and scatter with sugar to sweeten. Place in the microwave on medium heat for 5 minutes, they should be just breaking down with just a few pieces of apple left. Set a side whilst you make the sponge
  2. Place the eggs, sugar, fats in a bowl, sift the flour, baking powder and cinnamon into the egg mixture. Using a hand mixer or a stand mixer beat together for 2 minutes until light and fluffy.
  3. Place the apple in the greased dish and then spoon the sponge mixture gently on top of the apples making sure all the apple is covered.
  4. Place in the oven on the middle shelf for 30 minutes until golden in colour
  5. Serve with custard or vanilla ice-cream
